Black Olive Tapenade
Black olive tapenade is a great flavouring for foccacia bread, is delicious as a dip and is a great accompaniment to vegetables. The tapenade can be made in advance and kept in the fridge for up to a week.
Ingredients
250g Black Olives
75g Anchovies
25g Capers
1 Clove of Garlic
10ml Extra Virgin Olive Oil
Method
1. Remove the skin from the garlic clove and blanch in boiling water for 5 minutes to remove the harsh taste, allow to cool.
2. Combine all the ingredients and blend together until a smooth paste is formed
