Apple and Marrow Chutney

This chutney is a delicious accompaniment to cheese and is also great in a sausage sandwich with plenty of crunchy lettuce.

 

Ingredients - Makes one large jar

250g Marrow
250g Tomatoes
125g Apples
125g Onions
125g Sultanas
125g soft brown sugar
150ml white wine vinegar
½ a Deseeded chilli
10g Fresh ginger
3 Cloves
½ tsp Black pepper
½ tsp Coriander seeds

 

Method

 

1. Finely chop the onion; ginger and chilli then cook without colour in a large heavy bottomed pan for about 5 minutes.


2. Cube the marrow, tomato and peeled apples in to 1cm by 1cm cubes and add to the onion mixture, continue to cook for another 5 minutes


3. Add the sultanas, soft brown sugar and vinegar at this point.


4. Grind the pepper, cloves and coriander seeds in a pestle and mortar and add to the pan.


5. Allow the mixture to simmer on a low heat for approximately 1 hour until all of the ingredients are tender and a thick chutney consistency is produced.


6. Spoon the mixture into a sterilised jar and allow to cool, this should keep indefinitely if stored in the refrigerator
